Apple, Oatmeal and Coconut Muffins

Muffins are ideal for a quick breakfast, or light snack with a cup of tea. High in fiber with crunchy apple, oatmeal and whole wheat, these muffins are a dieter’s dream. Just be sure to chop the apples small enough to cook through in a muffin. I didn’t bother peeling them, which was a real time saver.

(12 servings)
2 cups apples, chopped
1 cup oatmeal
1 1⁄4 cups plain lowfat yogurt
1⁄2 cup honey
1⁄3 cup coconut, shredded (1 cup)
1⁄4 cup extra virgin olive oil
1⁄4 cup egg substitute
1 1⁄2 cups whole wheat flour
2 teaspoons baking powder
2 teaspoons cinnamon
1⁄4 teaspoon cloves, ground

Preheat oven to 375.

  1. Combine apples, oats, yogurt, honey coconut, and oil. Mix well.
  2. Add egg and mix throughly.
  3. In a separate bowl combine flour, baking powder and spices.
  4. Add to oat mixture and mix until dry ingredients are moistened.
  5. Fill muffin cups and bake for 25 minutes until done.
