Bacon! Cucumber, Goat Cheese and Bacon Appetizers

My husband and I need to lose a few pounds before the holiday season tests our self control and those few pounds turn into many.

Axing calories means eliminating the extras in the pantry.

Extras are anything that doesn’t fit into a weight loss scenario like the Pop chips I adore, the peanut butter and jelly sandwiches Mike lives on, and the bacon bits we sprinkle on salads.

The dilemma was what to make with my stash of bacon bits, containers of low fat cream cheese, and tart crumbles of goat cheese that I have to get rid of before diet day.

I’d rather have needles poked into my eyes, before I’d throw food into the trash!

I decided an appetizer recipe would make perfect use of my tasty ingredients. All I had to do was cream together my handful of ingredients, and stuff the creamy mixture into little cucumber boats.

These scrumptious little bites turned out to be calorie friendly too. Although the fact that the two of us ate the entire plate probably explains why we need to lose about 10 pounds each.

Bacon! Cucumber, Goat Cheese and Bacon Appetizers

Serving Size: 24

Ingredients

  • 4 ounces low fat cream cheese
  • ½ cup goat cheese, crumbled
  • ½ cup bacon bits
  • ¼ cup chives
  • 2 tablespoons parsley
  • 2 tablespoons low fat milk
  • 1 large English cucumber

Instructions

  1. Combine cream cheese, goat cheese, bacon bits, chives, parsley and milk in a bowl until well blended.
  2. Halve the cucumber and scoop out the middle. Cut into small boats and fill with cream cheese mixture.
  3. Chill for 10 minutes and serve.

These cucumber bites look so appetizing. Creamy and refreshing. No problem to nibble down a plate of these yummy treats :)

Hmm, great mix of ingredients on a no cal cucumber. But now I have a peanut butter and jelly sandwiches craving, I have not had one in ages.

I’m fortunate that I’m not a big peanut butter fan, so I don’t have to worry about those calories, although everything in moderation right?

I admit I was surprised when I had my recipe calculator tally up the calories. I ran it through twice because I didn’t believe it the first time. These are definitely on my list of holiday table appetizers. They’ll make a good gluten free option. Have a wonderful weekend. :)

I feel like I can see my hard earned dollars floating into the trash when I have to throw away food. Now that I have my own compost bin, at least when the produce has to go, I know it will get put to good use.

It’s definitely a challenge to cut calories this time of year. That’s why we’re starting a month before Thanksgiving so we can get a jump on the holiday season. :)

Total yum. I love all those ingredients. Well, OK, I’m not a fan of bacon bits. I usually have low fat cream cheese in the fridge for Brian but I don’t eat it. The crumbles of goat cheese I always have and sprinkle just a touch on salads. I find that it makes the salad worth eating without really adding that much in the way of calories. Some foods I can live with in the house without eating or indulging. Others must be banished. Cheesecake, for example, must be banished. :)

I keep goat cheese in the frig for the same reason. It has such a strong taste that you don’t need as much when you add it to dishes. You get big bang for your flavor buck! You’re like my husband. He’s the sweet and dessert eater. I’m more the salty chip and cracker person. :)

What a wonderful appetizer! I’d definitely put bacon and try to control how much I eat… :) I rather want to enjoy the best of best even I can have just one bite… Love how you cut cucumbers. So cute and perfect bite size!

I don’t think they’d be as good without the bacon bits. They add a nice, smoky flavor that works well with the goat cheese and chives. Have a wonderful weekend! :)

Thought peanut butter was fine if not over indulging yourself. My husband loves peanut butter and banana on some homemade bread for his breakfast. I usually just spread a very thin layer on the bread, less than 20 grams for 2 slices of bread.
Cucumber instead of bread or cracker for these finger sized appetizers is brilliant. They look tempting!

After preparing for our diet, we were pretty much out of crackers and bread (it’s not on the plan for a few weeks), so the cucumber worked well. As far as I’m concerned, anything in moderation is just fine. The problem for Mike and I is that our ideas of moderation have led to a creeping waistline this year. :)

These Appetizers look very tempting and the cream cheese and bacon spread recipe with added herbs such as chives sounds wonderful – veggies are a perfect vessel for serving delicious appetizeres – great idea!

I with you on wasting food – really hate to do it. And I could probably always lose 10 pounds! But you’re right about this time of the year – pounds will creep on, so you’re smart to take action now. Great looking dish – nice combo of flavors, and the cucumbers make the perfect foundation for them.

Those would be perfect at a dinner or party. I love the crispness of a cucumber and that goat cheese bacon mix sounds divine. Add the fact that they’re healthy and double bonus! How many servings do you think it would make?

Wow! Thanks for the catch. I forgot to put the serving size in! I was able to get 24 servings. I’ve fixed that now. My calorie counting friends wouldn’t have been to happy with me. :)
