Nothing compares to the food and recipe blogging community. We love to share anything food related, and most of us talk about the subject 24/7 and never tire. (Although, I imagine the folks around us would like to change the subject now and then!)
Since sharing nutritious recipes is my passion, I’d like to ask you to join me in my first Weekend Recipe Roundup. Feel free to post your favorite recipe of the week. My only request is that you link to recipes that are lower in calories and nutritious.
My contribution is this sweet grilled salmon topped with a fruity peach salsa.
We took a recent trip across the mountains to find some sun, and came home with the most fragrant white peaches. I couldn’t resist complimenting our weekly salmon recipe with a fruit salsa made with my peachy treasures.
I hope you’ll share your favorite recipe of the week with my readers. I know they’d love the variety! Simply scroll to the end of this salmon recipe and click on the Linky Tools link to add your contribution. This is my first opportunity to use Linky Tools, so if you have any trouble, please don’t hesitate to leave a comment, or email me at motherrimmy@gmail.com.
Happy cooking!
Barbecued Salmon with Peach Salsa
Serves 2
Ingredients:
8 ounces Wild Alaskan Salmon Filets
½ large peach, chopped
1 tablespoon maple syrup
4 tablespoons catsup
1 pinch red pepper flakes
½ large peach, chopped
¼ cup red onion, finely chopped
½ medium avocado, chopped
½ small lemon, juiced
Method:
1. Preheat grill to medium.
2. Place salmon on lightly oiled foil.
3. Combine 1/2 peach, maple syrup, catsup and red pepper in a blender and blend until smooth.
4. Top salmon with sauce and grill 5 – 8 minutes, depending on thickness until salmon just flakes in the center. Don’t over cook or salmon will be dry.
5. Combine the remaining half of the peach, red onion, avocado, and lemon juice in a bowl. Salt to taste.
6. Top salmon with salsa.

Great summer dish! Unfortunately, I don’t have a recipe to share at the moment. We were traveling, and I have been unplugged from my computer and my kitchen!

Boy do I envy you! Enjoy your trip!
The peach salsa sounds really good and refreshing. Must go very well with the barbecue salmon.
I just love the white peaches. They aren’t quite as sweet, at least to me, so they worked perfect with the salmon.
I am not a fan of salmon but the peach salsa part of this recipe is right up my alley! I love the blend of avocado and peaches yum!!!
I could see this easily translate to a chicken breast if you like chicken. Hmmmm. Sounds like a good idea!

I love grilled salmon, and I love peaches. I don’t know which one of these look better. We’ll just call it a tie!
Love the salmon and i am in!!! Pretty sure I posted everything right. Good luck with the link up! Tried to find my lowest calorie dish this week. LOL, but it wasn’t easy. need to rethink this weeks menu
Do you have a button/badge yet for the blog hop? Want to be sure to get it on my sidebar (and to help me remember to submit… me and Forrest, we are not smart men).
And BTW, I have a giveaway contest if you are interested on my blog today.
Thanks Dave! I’ll check that out. I don’t have a button. I’ll have to work on that. It’s tough when the full time job takes precedence.
Wow, salsa looks fantastic, love the recipe….refreshing:)
Mmm peach salsa is soooo good! I love that you made it to use with the salmon. Sounds delicious!

I only wish my guys would eat Salmon. This sounds soooo good. I don’t get it cause they all really enjoy fish and seafood but snub their noses at salmon. Men!

Salmon has a very distinctive flavor that some folks like and some hate. At least that’s been my experience. My son’s fiance got him to eat salmon, but then she has a lot more clout with him than I do.
like the acid with the sweet fruit and avocados, very nice topping for salmon I would suspect – I would love to join you linky but I’m afraid my cooking won’t meet the requirements… I am working on one myself, don’t know too much about these linky thingies

I didn’t either and apparently Linky Tools doesn’t play well with self-hosted Wordpress blogs so this has been a challenge. We’ll see how it goes over the next few weeks. Have a terrific work week!
I’m curious about the taste of salsa and peach in one. I think that this is very delicious and this food is very healthy. Thank you for sharing this recipe to us.
Would never have thought of this. Great idea!
Beautiful salmon dish and love the salsa! My light dishes were all last week, but will keep it in mind next time
