Nothing compares to the food and recipe blogging community. We love to share anything food related, and most of us talk about the subject 24/7 and never tire. (Although, I imagine the folks around us would like to change the subject now and then!)

Grilled Salmon Recipe with Peach Salsa

My contribution is this sweet grilled salmon topped with a fruity peach salsa.

We took a recent trip across the mountains to find some sun, and came home with the most fragrant white peaches. I couldn’t resist complimenting our weekly salmon recipe with a fruit salsa made with my peachy treasures.

Barbecued Salmon with Peach Salsa

Serves 2

Ingredients:

8 ounces Wild Alaskan Salmon Filets
½ large peach, chopped
1 tablespoon maple syrup
4 tablespoons catsup
1 pinch red pepper flakes
½ large peach, chopped
¼ cup red onion, finely chopped
½ medium avocado, chopped
½ small lemon, juiced

Method:

1. Preheat grill to medium.
2. Place salmon on lightly oiled foil.
3. Combine 1/2 peach, maple syrup, catsup and red pepper in a blender and blend until smooth.
4. Top salmon with sauce and grill 5 – 8 minutes, depending on thickness until salmon just flakes in the center. Don’t over cook or salmon will be dry.
5. Combine the remaining half of the peach, red onion, avocado, and lemon juice in a bowl. Salt to taste.
6. Top salmon with salsa.

Great summer dish! Unfortunately, I don’t have a recipe to share at the moment. We were traveling, and I have been unplugged from my computer and my kitchen! :)

I just love the white peaches. They aren’t quite as sweet, at least to me, so they worked perfect with the salmon.

I am not a fan of salmon but the peach salsa part of this recipe is right up my alley! I love the blend of avocado and peaches yum!!!

Love the salmon and i am in!!! Pretty sure I posted everything right. Good luck with the link up! Tried to find my lowest calorie dish this week. LOL, but it wasn’t easy. need to rethink this weeks menu

I only wish my guys would eat Salmon. This sounds soooo good. I don’t get it cause they all really enjoy fish and seafood but snub their noses at salmon. Men!

Salmon has a very distinctive flavor that some folks like and some hate. At least that’s been my experience. My son’s fiance got him to eat salmon, but then she has a lot more clout with him than I do. :)
