This fresh tuna salad is stuffed into sweet tomatoes, making it a calorie-friendly super tasty meal.

It’s been months that you’ve listened to my complaints about the lack of sun here in Seattle, yet I feel a tremendous compassion for my friends in other parts of our lovely country who are experiencing just the opposite – extreme heat waves. It appears there is no happy medium this summer for any of us.
For my friends who are sweltering in the heat, I’ve created this healthy – no oven or grill involved – tasty stuffed tomatoes with tuna salad recipe.
I’m afraid sweet, sun-kissed tomatoes haven’t blessed my garden yet, so these tomatoes are from the farmer’s market. While they taste good, you can tell by the flavor that they’re truly missing the heat that makes them sweet.
This tuna salad is slimmed down by chopping deep green kale, parsley and celery into the mix. The addition of light cream cheese adds a sweet creamy texture and flavor, along with some spicy Dijon mustard and creamy low-calorie mayonnaise.
Healthy cooking tip . . .
I see nothing wrong with adding mayonnaise to a recipe when it’s done in moderation. I opt for new offerings on the market that contain olive oil. They are typically lower in calories and I like the addition of heart-healthy fats. Just don’t be fooled, even quality products like Hellmann’s and Kraft use a blend of oils and aren’t 100% olive oil and contain canola and soybean oil.

Ingredients
- 4 large tomatoes
- 10 ounces water packed tuna, drained
- ¼ cup parsley, chopped
- ½ cup kale, finely chopped
- ½ cup whole wheat bread crumbs
- ½ cup celery, finely chopped
- 3 tablespoons light cream cheese, softened
- 1 teaspoon Dijon mustard
- 4 tablespoons light mayonnaise
- 1 tablespoon lemon juice
Instructions
- 1. Cut the very top off the tomatoes and scoop out the middle. The tomato should form a cup, so don't scoop out too much of the flesh.
- 2. Combine the remaining ingredients and stuff into the tomatoes. Chill and serve.

I agree with you wholeheartedly about the mayonnaise. I actually prefer Hellmann’s olive oil variety. I’ve never added kale to tuna salad, but with all its benefits I’m more than willing to give it a try. Thanks for sharing the recipe (especially since we do have beautiful tomatoes from the garden.
If you use kale make sure to chop it into small pieces, it’s a bit tougher than spinach. I picked out the more tender leaves. Lucky you to have wonderful tomatoes!
I put down at least two large cans of tuna per week. Luckily, central Florida is a great place for good quality tomatoes. Will try this recipe out very soon!
It was certainly easy enough. If you aren’t a kale fan, spinach would work just as well.

Tomatoes are one of the very best edible containers for foods! When you mention tomatoes needing heat to make them sweet, Kristi, I am reminded of growing up in the very warm Yakima Valley. I would take a salt shaker out with me and park myself in the tomato patch. Warm tomatoes sprinkled with a bit of salt! Nothing like sweet tomato juice dribbling down your chin! Ahhhh, pure heaven!

Kristi, I am saving this recipe to make the best use of my small crop of greenhouse tomatoes when they are fully ripe, or until I can find a gardener with a glut of delicious fruits. Yum.
Lucky you! I think I’d need a green house to get any tomatoes this year. One of these days I’ll post a picture of my sweet little, pathetic little garden. Hopefully Seattle will have a warm August and September to rescue my garden.

oh yes, this is one for me, it is really hot as the dickens down here although today we are blessed with rain making it a bit cooler… I do like to add crunch factor in salads and this tuna salad sounds just right…

LOVE the kale in this. I have recently become obsessed with raw kale, it’s soooo good and yet I have never put it in tuna.
It is good. I like the more tender leaves when I’m using it raw. They seem to be less bitter.
