Don’t get me wrong, I love zucchini. But when it comes to favorite veggies, asparagus is at the top of my list.

When I saw bundles of my go-to vegetable on sale at the grocery store, I couldn’t resist dropping a few into my cart. Packages of thinly sliced beef were affordable too, so they landed next to the asparagus.

I had no idea what I was going to do with my thrifty purchases, but then inspiration came as I was carting my loot home.

Why not turn my asparagus and beef into an easy appetizer?

All I’d have to do is slice my beef into strips, and wrap it around the asparagus!

A quick zap in the microwave produced crisp tender asparagus that cooked at the same rate as the beef I’d wrapped around it and secured with toothpicks.

All I needed was a dipping sauce.

A pantry check produced a jar of spicy horseradish – perfect for this horseradish lover. Flavor without fuss, and now my beefy asparagus appetizer was ready for the table in time to relax with a well-deserved glass of wine.

Beef Wrapped Asparagus
  • 12 ounces beef steak, thinly sliced, then cut into long 1½" strips
  • 20 ea asparagus spears, medium stalks, trimmed
  • 1 ½ tablespoons olive oil
  • ½ tablespoon Worcestershire sauce
  • ½ tablespoon low sodium soy sauce
  • 2 cloves garlic, crushed
  • 2 tablespoons Parmesan cheese, shredded
  • 4 tablespoons horseradish sauce
  1. Preheat indoor or outdoor grill to medium heat. Oil grates to keep food from sticking.
  2. Line a plate with paper towel. Pile asparagus on the plate evenly and microwave on high for two minutes. It should be crisp-tender.
  3. Break toothpicks in half to pin steak to asparagus.
  4. Combine olive oil, Worcestershire sauce, soy sauce and garlic in a bowl.
  5. Wrap each piece of asparagus with beef by pinning one end to the top of asparagus with a toothpick, then winding it down the stalk and pinning to the bottom.
  6. Brush olive oil mixture over beef and asparagus stalks and grill for 2 - 3 minutes per side until beef is cooked.
  7. Serve sprinkled with Parmesan cheese and horseradish sauce.
