If you love beets, this beet salad with grapes, apples and walnuts will make your taste buds happy!
I know it sounds like an odd combination, but this incredibly simple salad of steamed beats, diced apples, purple grapes, mellow green onion, dressed with a walnut vinaigrette, will definitely land on our dinner table again.
And if you’re not a beet lover?
You’re missing out, but I get it. I’m not a fan of mushrooms. Replace the beets with diced celery, and you’ll have a healthy salad with crunch.

Shake It Up! Not a fan of beets? Use any other fruit that strikes your fancy.
- 2 cups baby beets, steamed and cubed
- 2 cups red grapes, halved
- 1 medium apple , chopped
- ¼ cup green onion, very thinly sliced
- ½ ea lemon , juiced
- 1 tablespoon walnut oil
- 4 tablespoons walnuts, chopped
- Combine ingredients in a bowl and chill for 15 minutes. Season with salt to taste.
