I Need a Plan – Blue Cheese and Basil Salad Dressing

We all have weaknesses.

My weakness is blue cheese served with the crusts from a loaf of fresh French bread. I don’t eat the soft, cloud-like middle of the bread, I only eat the crust – with a spread of blue cheese. Clearly I have a blue cheese and French bread crust problem and I need some intervention.

I need a plan – a blue cheese fix without all the calories.

Maybe I should chop a plate of fresh vegetables to replace the crusty French bread, and whip up a blue cheese salad dressing recipe to dip them in. Sounds boring compared to my guilty pleasure, doesn’t it?

Now I’ve satisfied my blue cheese craving with an entire meal I can feel good about eating. No regrets -  I’m truly happy.

Ingredients

  • ½ cup blue cheese , crumbled
  • ½ cup low fat cottage cheese
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ¼ cup water
  • 2 large basil leaves

Instructions

  1. Combine ingredients in a blender and puree. Chill before serving.

That’s the problem. I’m not disciplined at all when it comes to blue cheese and French bread. I could eat the whole container by myself. Enjoy your week. :)

Nice dipping and like you, I too prefer yoghurt than mayonnaise. You bet this healthy recipe will be great as a salad dressing.

Looks good Kristie. I’m a big blue cheese fan also, and think there’s nothing better than pairing Maytag Blue with slices of pear. And then dipping sticks of celery into my homemade blue cheese dressing. I must give your version a try.

People either love blue cheese or hate it. My brother used to call it “stinky cheese.” Needless to say, he hated it. :)

I have to say I get tired of vinaigrette, and since blue cheese is my downfall, this helps a bit. :)

I’m with you on blue cheese. Anytime I go to a dinner party I have to avoid all of the delicious blue cheeses laid out before I devour them all. Love the idea of doing a sandwich spread/dip to give me that flavor.
