This slender chicken salad packs a punch with buffalo sauce and a creamy blue cheese dressing.
We clean our house on Thursday nights. It sounds crazy, doesn’t it? Who cleans their house on Thursdays!

We came to an agreement once the kids left the house and we were no longer committed to kid stuff, that we wanted our weekends free. Thus the advent of Thursday night house cleaning.
The genius of Thursday night cleaning is that I have help now. Days gone by, if I’d tried to enlist recruits on the weekend, Mr. Mike would be off golfing or fishing, and I’d be scrubbing floors alone.
In order to get Thursday night chores off to a good start, a quick dinner has to be put on the table first, or Mike won’t have anything to do with the tasks at hand. And since we’re both weight watching these days, a healthy salad is the quickest alternative to getting dinner on the table.
Tossing chunks of chicken breast with Frank’s Hot Sauce and a little maple syrup, then baking them in the oven takes less than 20 minutes, so we’re off to a good start with our buffalo chicken.

Then a bed of lettuce, crunchy celery and sliced green onions finish off this buffalo chicken salad in no time flat. Dinner was on the table in less than 30 minutes, and Mr. Mike was off to vacuum the bedroom.
Sounds like a genius plan, right?

- 1 pound chicken breasts, cubed into bite-sized pieces
- ½ cup whole wheat pastry flour
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ cup Franks Hot Sauce
- ½ tablespoon 100% maple syrup
- Preheat the oven to 350 degrees.
- Line a cookie sheet with parchment paper.
- Combine flour, salt and pepper in a large bowl.
- Toss chicken with flour and place on the parchment paper.
- Bake for 15 - 20 minutes until chicken is done.
- Combine Franks and maple syrup in a large bowl.
- Toss chicken with Franks.
