Do you remember my obsession with orecchiette pasta?
I’ve been hoarding the last bag of pasta, waiting for a summer barbecue to make a pasta salad. With fresh tomatoes and basil in abundance, a caprese salad seemed like the perfect use for my hard earned pasta.
To bring you up to speed, I spent an unreasonable amount of time hunting down this fun pasta Wikipedia describes as pasta with “a shape that resembles a small ear.”
I admit the “small ear” description wasn’t exactly appealing, so I prefer to refer to this miniature pasta as “flower petals”. I’m guessing you’ll agree with my change of description.
Caprese generally refers to a dish prepared with tomatoes, fresh basil, mozzarella cheese and olive oil – the perfect scenario for a pasta salad.
I’m keeping my summer salad light and calorie friendly with a drizzle of healthy olive oil and fresh lemon zest. Minced garlic gives it a hint of spicy heat. With fresh basil in the bowl, it really doesn’t need anything else.
This was the last of my orecchiette, so I’ll be on the hunt for more. I know I can find it at Sur la Table, but this time I’m looking for a quinoa version.
I love a treasure hunt! Wish me luck!
