I love a good road trip. I find driving down the road listening to my favorite music and watching the scenery go by, relaxing and energizing at the same time. A few months ago, my daughter and I hopped in the car and drove to Coupeville – a tiny town on Whidbey Island. The town is warm, inviting, and boasts a colorful and artistic community. I can make a meal of these tasty little appetizers inspired by The Incredible Egg. These mini quiche are simple to prepare, inexpensive, and amazingly versatile. Add whatever meat and vegetables you have on hand to whipped eggs, then pop them in the oven. It doesn’t get any easier than that!
