If you’re looking for a meal on the lighter side, try this chicken salad with sweet apples and grapes served with a spicy Dijon vinaigrette.
There is no way I want to cook on a Monday night if I can avoid it.
Like many people, Mondays are difficult for me – it’s not often that I make a significant dent in my to-do list over the weekend. In fact, it’s not unusual to see that I’ve added tasks to that infernal list.
That’s why after work on a Monday I take advantage of anything left in the refrigerator from the weekend to make a simple dinner.
Adding a few extra pieces of chicken to the grill, or roasting a pile of vegetables in the oven while I’m making Sunday’s supper makes for a quick wrap, or simple chicken salad on those busy nights.
Now that I think about it, this chicken salad recipe would have been fantastic in a wrap – darn!
For tonight’s meal I added crunchy apples, juicy grapes, and a light Dijon vinaigrette to my leftover chicken.
It’s a shame after saving time making dinner that I can’t go read a book – after all – there’s laundry waiting. Enjoy your week!
Serves 2 large salads or 4 small side salads

- 6 cups romaine lettuce, thinly sliced
- ½ cup red onion, chopped
- 1 large apple, chopped
- ½ cup grapes , halved
- 1 cup cooked chicken breast, cubed
- 1 tablespoon grape seed oil
- 1 tablespoon pomegranate red wine vinegar, apple cider vinegar works too
- ½ tablespoon honey
- 1 teaspoon grainy Dijon mustard
- 4 tablespoons sunflower seeds, toasted
- Combine grape seed oil, mustard, vinegar and honey in a small bowl.
- Toss remaining salad ingredients in a bowl and then toss with dressing
