I’m not big into casseroles, because they are often loaded with calories and fat. However, I have to admit this one from myrecipes.com is a crowd pleaser. Cheezy, creamy, deliciousness in a casserole dish with surprisingly few calories.
I have to assume the use fat free versions of mayonnaise, sour cream and soup contribute to the reduction in calories. If you are going to use light and fat free versions of your favorite condiments, dressings and soups be sure to check the ingredient list. Often times they’ve added lots of sugar and sodium to make up for the reduction in fat. I’m not saying there aren’t some really great low fat products out there, just that you need to be a label reader.

You do need to know that a one cup serving definitely calls for a whole grain roll on the side or a light salad. One cup really doesn’t make a meal, but more than a cup would be too rich.
