I’m shocked when I hear temperatures in parts of the country are up over 100 degrees. If you’re living through those heat waves, I’m sure firing up the stove is the very last thing you’re inclined to do.
Fortunately – or unfortunately, depending on your perspective, here in Seattle we have no problem firing up the burners to make this healthy Mediterranean chicken wrap. While I wouldn’t want to trade places with you, and I’m so sorry for folks having to endure such uncomfortable temperatures, I wouldn’t mind splitting the difference. I would happily send some of my cold and rain your way to provide relief, and you can send some of your warmth and sun my way in return.
This chicken wrap recipe is packed with good for you zucchini and kale, with fruity balsamic vinegar, capers and tart feta cheese to finish it off with a Mediterranean flair.
Healthy cooking tip . . .
If you have a few dollars to spare, invest in a good, large non-stick skillet. My skillet is manufactured by Calphalon and was $80 on sale. I realize there are much more expensive non-stick skillets on the market, but it was more than I typically spend on cookware and was worth every penny. I can use a minimum of oil when cooking foods, and I rarely have a problem with food sticking and burning.

Serves 6
Ingredients
- 6 medium whole wheat tortillas
- 1 tablespoon olive oil
- 1 cup red onion, chopped
- 2 cups zucchini, cubed
- 2 cloves garlic, minced
- 1 small lemon juice
- 1 small lemon zest
- 2 tablespoons balsamic vinegar
- 2 tablespoons capers
- 2 tablespoons green olives, chopped
- 1 cup tomatoes, chopped
- 6 tablespoons low fat feta, crumbled
- 1 tablespoon olive oil
- 1 pound chicken breast, cubed
- 2 tablespoons oregano, fresh chopped
- 1 tablespoon thyme, fresh chopped
Instructions
- 1. In a large non-stick skillet heat 1 tablespoon olive oil over medium high heat. Add onion, kale and zucchini. Cook for 5 minutes until crisp-tender. Add garlic, lemon and zest, vinegar, capers and olives. Cook another 3 minutes, then remove to a bowl.
- 2. Add another tablespoon oil to the skillet and add chicken, oregano and thyme. Cook for 5 minutes until chicken is cooked through. Add back the vegetables and heat through.
- 3. Toss with tomatoes and feta. Serve with tortillas.

This recipe is right up my alley! And if you can find a way to split the difference with the weather, you’ve got yourself a deal – I could definitely go for some nice, cool rain right about now.
I know so many blogging buddies feel just as you do. Here in Seattle it’s hard to imagine. We did have a heat wave a few years ago that got up to 104 – very high for this area of the country. It wasn’t fun for anyone, so I do understand. 🙂

It’s true about it feeling like winter, or at a minimum a very nasty spring! I was just saying that it’s making people very cranky not to see the sun, and I miss having a bountiful garden. 🙂

Hello Mother Rimmy! I’m with you! A good non-stick pan is a low-fat cook’s best friend! I have three (2 sizes) that I’ve paid BIG $$$ for, but they’ve been worth it. I always tell folks that if you can’t get an expensive one – get an inexpensive one and change it often!
You are so right, that’s why I finally spent more money on a good pan. I figured I was swapping out the $20 version every year!
thank goodness, our temps have dropped back down in the 90’s, still, I keep the a/c pumping and a fan on me in the kitchen, and that’s just when eating ice cream… these wraps sound good and look it too, full of some pretty good eating stuff, like everything about it ya know, esp the capers…

Thanks Kathy! I didn’t have a problem getting my husband to eat these. As long as there is a wrap around it, he’ll eat it. If I served this dish without the wrap – now, that’s a different story.

These wraps look so great! Packed with all those fresh veg and I love feta, so that’s the topper for me! Yum! Our heatis just starting to pick up, so I’ve been doing my cooking first thing in the morning and then lounging through the heat of the day … sun tea in a jug on the terrace and ice cubes being made constantly!
