Start your day the refreshing way with a minty orange and pineapple fruit salad sprinkled with coconut flakes and bits of toasted walnuts.
I have to say I’m proud of today’s 5 Ingredient Friday recipe though I can’t take complete credit for the idea.
A few weeks ago Sun Basket sent me a box of organic ingredients that included a recipe for grapefruit salad. I’m a veggie lover, not a fruit lover, but this salad was so refreshing that I had to develop my own citrusy creation.
Oranges are abundant this time of year, so I cut them into chunks and tossed them into the bowl with canned pineapple (no added sugar of course!).
I had crushed pineapple on hand, so I drained the liquid off and used that, but you could easily add pineapple chunks if that’s what you find in your pantry.
Toasted unsweetened coconut flakes and walnut pieces added crunch and texture along with fresh mint to finish off this recipe with just 5 ingredients.
When I whipped up this dish, Mike and I were working on the Whole 30 (a food plan that eliminates grains, legumes, refined sugar and dairy), so this fruit salad made a terrific breakfast served with eggs and homemade sausages.

- 4 large oranges peeled and cut into bite sized pieces
- 1 cup crushed pineapple, drained, reserve juice for another use
- 1/2 cup toasted unsweetened coconut flakes
- 1/2 cup walnut pieces
- 1/2 cup fresh mint, finely chopped
- Combine ingredients in a large bowl and chill for 30 minutes.
