When I was raising kids, corn dogs held a place of honor on this family’s list of favorite foods. They were best when we got them from the vendor at the local Sears department store. Their corn dogs had a crispy, sweet corn breading on the outside, and a juicy hot dog on the inside.
If a trip to the department store wasn’t in order, I’d buy the big boxes of corn dogs and throw them in the freezer. They weren’t quite the same, but they ran a close second.
The kids are gone now, and even though my waistline can’t afford the calories, when a corn dog craving hits it won’t go away until it’s satisfied.
My healthy eating philosophy is that no food is off limits if I just make a few adjustments. In this case my mini corn dog recipe skips the deep fat frying in favor of baking them in the oven, provides automatic portion control, and adds a healthy slaw on the side.
Now I’ve saved myself a few calories, and I still get to enjoy a memorable corn dog while I watch my favorite football team stomp on their opponent. Sounds like a good weekend to me!

Ingredients
- 1 cup cornbread mix
- 2 tablespoons onion, finely chopped
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 large egg white
- ½ cup low fat milk
- 2 ea hot dogs, cut into 12 pieces
- 4 cups slaw mix
- ½ cup onion, finely chopped
- 1 tablespoon lime juice
- 1 tablespoon jalapeno pepper , finely chopped
- ½ medium avocado, mashed
- ½ tablespoon honey
- ½ teaspoon chili powder
- ¼ cup low fat plain yogurt
Instructions
- Preheat the oven to 350 degrees.
- Combine cornbread mix, 2 tablespoons onion, 1 tablespoon lime juice, 1 teaspoon chili powder, egg white and milk in a bowl. Mix until smooth.
- Spray a mini muffin tin with cooking spray and spoon cornbread mix into the muffin cups. Press one piece of hot dog into the middle of each cup. Bake for 10 minutes until a toothpick inserted in the center comes out clean.
- While the corn dogs bake, combine slaw, remaining onion, lime juice, jalapeno pepper, avocado, honey, remaining chili powder and nonfat yogurt in a bowl. Season with salt and pepper to taste.
- Serve mini corn dogs with slaw.

This is absolutely fabulous. I must make this. I would love it but better, my grandchildren are coming and I want to make this for them. I just printed it and I am going to make it tomorrow, if I can turn the mix into my own cornbread recipe. We have celiac in the family and I have to do my own thing. I owe you for this one.
Hi Chaya. You’ll have to let me know if they like it. I used Bob’s Gluten Free Corn Bread mix. We don’t have a gluten problem in my house, but it just seems like it’s in everything, so I like to reduce it when I can.
How fun!! I haven’t had a corn dog in YEARS. Literally, years. I would love to try making my own. And the recipe called for yogurt?! See..it’s got some health components to it, so why not make it?!

Even better, I used kosher all beef dogs, so at least the hot dogs were a little better than the typical dog.
