I’m really into baked eggs. They are so versatile! You can add most anything to a baked egg recipe, and come up with something new and tasty.
Asparagus, sun dried tomato and parmesan cheese dress this egg dish up. And don’t forget to add the quark! This creamy cheese really gives these baked eggs a silky texture.

Serves 2
Ingredients
- 2 large eggs
- 2 large egg whites
- 2 tablespoons sun dried tomato, finely chopped
- 2 tablespoons onion , finely chopped
- 1 tsp thyme, minced
- ½ cup quark (a creamy cheese that can be found in your grocery dairy section) or substitute your favorite melting cheese
- 2 tablespoons parmesan cheese , shredded
- 8 small asparagus spears
Instructions
- 1. Preheat oven to 375.
- 2. Steam asparagus until tender.
- 3. Whip eggs with quark, thyme and salt and pepper to your taste.
- 4. Heat non-stick skillet over medium heat and spray with cooking spray. Saute onion and tomato for 4 minutes until onion is translucent.
- 5. Spray small baking dish with cooking spray and add onion and tomato. Add eggs. Top with asparagus and parmesan cheese.
- 6. Bake for 10 - 15 minutes until egg is set.

Free range, or cage free eggs are considered to be higher in quality nutrients such as all nine essential amino acids, and are less likely to contribute to high cholesterol levels.

We love to have eggs for dinner – I’m like you as far as the eggs go. I always use some eggs and some egg whites. It’s just healthier – my hubby has to watch his cholesterol so it’s a good choice for us. I found you through FoodBuzz and I focus on healthier food too, so I’m glad we’ve crossed paths.
I’m glad we crossed paths too. We are exactly in the same situation, as my husband also has high cholesterol. I’ve started buying cage free eggs to boost the nutrition in the eggs we eat. I’ve read they are a healthier egg choice.

It really was good and easy to make. This time of year we need some recipes that you can just whip together. I found it at our local grocery store in the cheese and dairy section by the ricotta cheese. 🙂
