



I have an interesting garden this year. Lots of kale, squash and English cucumbers. The cucumbers growing in my garden are the longest English cucumbers I’ve ever seen!
English cucumbers work perfectly in this easy salsa recipe and add a light touch to the more distinct taste of salmon.
I have to admit, life has been a bit busy lately, and I don’t recall where this recipe originated from, but I thank that person for a wonderful recipe.

Crunchy Cucumber Salsa and Grilled Salmon
Serves 4
Ingredients
2 pounds salmon filets
1 large english cucumber, chopped
1 package grape tomatoes, quartered
1 bunch cilantro, chopped
3 tablespoons capers
1 large lemon , juiced
1 tsp olive oil
½ medium purple onion , chopped
- Grill salmon with your favorite grill seasoning.
- Combine salsa ingredients and serve with salmon.

The salsa look great with grilled salmon. I like the flavors together. How wonderful that you have a garden with English cucumbers, they are a yummy cucumber.

I like them because they aren’t as watery, so the salsa doesn’t get too soupy.
