Recipe: Curried Chicken Salad with Grapes and Pepitas

Do you recall this Roasted Eggplant and Chicken Wrap recipe? If not, allow me to refresh your memory.

My husband thinks that hummus and curry taste like soap, so I decided to see if I could change his mind by serving him this chicken salad wrap that I’d spread with hummus. He ate every bite.

This week I took on the challenge to see if I could get him to eat curry. I find that deception works well when I want someone to try something they typically don’t like, so I tossed chunks of chicken, apples and sweet grapes with a creamy curry dressing. Then I mixed in a handful of chewy dried cranberries and pepitas to this curried chicken salad to add a little texture and crunch.

Naturally I neglected to tell him there was curry in the dish. My mother calls this “the sin of omission.” I call it being a creative cook. I won this challenge – there was not a single mention of soap during the entire meal.

    Glad you won your hubby over on this one! Mine asks too darn many questions when it's a new dish...can't pull too much over on him. He's not a curry fan either, but I have a feeling he'd eat your chicken salad :)

    I love a sweet and crunch element in chicken salad. I frequently make them with cranberries/craisins and pecans. I LOVE the idea of pepitas and apples! Nicely done (buzzed)

      My mother and I had our first curried chicken salad at lovely tea house. I've yet to make one as delicious as that one, but this comes pretty close.
