Sweet and Spicy Dijon and Mandarin Orange Chicken Salad
I can’t believe it’s been 11 days since I’ve gone to the store for anything but cat food, milk, coffee and a bottle of wine. It’s true, and my husband can attest to the fact that we have eaten the majority of leftovers and food in the pantry, refrigerator, and freezer.
In fact, I was a bit concerned about what I was going to make tonight, given I am very low on fresh fruits, whole grain bread and a large variety of veggies. I do have my veggie garden, but the tomatoes aren’t ready yet, so I’m limited to lettuce, kale and snap peas. Hmmmmm.
Not to worry though! Last night we roasted the last of the chicken on the barbecue and had roasted chicken and salad (big surprise!). Perusing my favorite recipe blogs, I couldn’t find a recipe that I had the ingredients to complete, so I made up my own.
It was either a hit with my hubby because he was tired of eating party leftovers for 10 days, or it was just really good. I prefer to think it was just really good.
This is really a calorie friendly meal that’s easy to make. You give it a try and let me know what you think!
p.s. If I had celery in the house, I would have added some chopped celery for crunch.
- 2 cups chicken breast, cubed
- ? cup light mayonaise
- 1 tsp dijon mustard
- 2 tablespoons chives, chopped
- 1 small orange , juiced
- ½ can mandarin oranges , drained and rough chopped
- ½ tsp rice wine vinegar
- 2 tablespoons almonds, sliced
- 1 tsp honey
- 1. Combine mayonnaise, honey, dijon and rice wine vinegar.
- 2. Toast sliced almonds.
- 3. Combine chicken, chives, 1 tbs almonds and oranges with dressing.
- 4. Serve chilled on salad greens, sprinkled with remaining almonds.
