I’m determined not to gain holiday weight this year! We already have several holiday celebrations in the works, so I’m going to make sure I eat light whenever I can.

This entire meal was under 300 calories, colorful and healthy. Delicious pork tenderloin, with a tasty salad recipe of mushrooms and tomatoes with a sprinkle of parmesan cheese.
Who wouldn’t be satisfied eating this meal?
Serves 2
Ingredients
- 8 ounces pork tenderloin
- 2 cups cherry tomatoes, quartered
- 1 cup mushroom , sliced
- 1 small yellow bell pepper, cut into bite sized pieces
- 2 large green onion, sliced
- 2 tablespoons parsley, minced
- 2 tablespoons parmesan cheese , shredded
- 1 tablespoon thyme, minced
- 2 tablespoons lite balsamic salad dressing
Instructions
- 1. Preheat oven to 350.
- 2. Season pork with grill seasoning.
- 3. Roast in oven for 40 minutes, or until a thermometer reaches a temperature of 160 degrees Fahrenheit.
- 4, Remove from oven and let rest for 10 minutes before slicing.
- In the meantime combine remaining ingredients to make your salad. Put in frig to chill while pork roasts.
What’s good for me in this dish?
Pork trimmed of visible fat can be considered a lean meat. Specifically boneless pork chops, or tenderloin. Pork is a good source of Vitamin C, Niacin, Phosphorus and Zinc, and a very good source of protein, vitamin B12, iron and selenium. Pork is higher in cholesterol.
Tomatoes provide a great source of vitamins C, A and K, not to mention the antioxidant and cancer preventing benefits of Lycopene. Tomatoes support colon and prostate health, and are a good source of potassium, niacin, vitamin B6, and folate to support a healthy heart.
