Don’t You Just Love Dessert? Apple and Cinnamon Stuffed Tortillas

I can skip the chocolate, cookies and cakes. They don’t tempt me to veer off my healthy eating plan, but chips and bread? You’d have to rip them out of my greedy little hands.

But there is one dessert that can send me to heaven . . .

. . . and that’s apple anything. Apple cake, apple cobbler, apple buckles, applesauce with whipped cream and crushed graham crackers (a treat Grandma Karen served when I was a kid).

So when Tortilla Land sent me samples of their tortillas and I had extras, I knew just what to make with them. Tortillas stuffed with a bit of light cream cheese and tender apples spiced with cinnamon.

The best thing about this dessert is that I don’t have to feel guilty about eating it!

Healthy cooking tip . . .

I have nothing against full fat dairy products. Often times a bit of a full fat product works better in a recipe than a low fat version. However, when the ingredient isn’t going to change the texture or flavor of a dish, I opt for low fat versions over full fat. I rarely choose nonfat. In most cases the product has increased sugar to replace the missing fat. I’d rather have a bit more fat, than loads of sugar.

Apple Stuffed Tortillas

Serves 4

2 medium tortillas
2 large apples, seeded and chopped
1 tablespoon honey
1 tsp cinnamon
1 cup water
2 ounces low fat cream cheese
2 tablespoons lemon juice

1. In a saucepan over medium heat, add apples, honey, cinnamon and 3/4 cups water. Cook for 15 – 20 minutes until the apples are tender. Add additional water if needed. Apples should not be watery.
2. Combine cream cheese and lemon juice until softened and spreadable.
3. Toast tortillas in a nonstick skillet over medium-high heat until just brown. Spread one side of a tortilla with cream cheese, then top with 1/2 the apples. Fold the tortilla over then warm through again on each side in the skillet.

This used to be one of my favorite snacks, but I used pita bread. Now that I’ve got a slew ot tortillas I’ll be revisiting one of my old standbys. Thank you for the reminder.

Yes, that does look fantastic. I’m right with you preferring fruit desserts to the richer cakes and chocolates. Thanks for the tip too. I don’t use non-fat either.

You know what? I am not much of a desertsy kind of cook, but I do like crepes! Sometimes I just feel like making crepes though and this looks like a real delish way of making a quick crepe. Good recipe…fast and easy and delicious!

I know that this already has cream cheese in it (dairy), but my 12 year old step-son thinks that perhaps a little vanilla ice cream on the warm tortilla would not go amiss. I love it when he starts thinking outside the box!

funny ’bout the chips and bread, I could pass on sweets too but don’t take away my crunchy chips or toasty toast…. and I am pretty much in favor of any thing peachy too, like them in everything I have tried time in, so far… but I have not done this here tortilla wrap with them before but I see one in the future with a big ‘ol scoop of ice cream on top

Oh wow Kristi this a fab idea for dessert especially since they are stuffed full of sweet yet healthy foods. I really enjoy tortillas, both flour and corn. I’ve been known to eat cream cheese and Nutella on tortillas for breakfast. I would like to have one of these right now!

I finally did this recipe yesterday and I must say it was really tasty..I thought the cheese would spoil the flavor but you don’t really taste the cheese at all..very nice I will make this again…thanks for sharing the recipe..
