



As I sit at my desk, I can hear coughing from every corner of our office. The fall cold season has hit with a big punch.Â
I was one of those lucky folks to have it knock me down for three weeks.
I’m sure I’ve complained about my cold affliction in other posts, so I won’t bore you with the details in this one.

Suffice it to say that I’m on the mend and very tired of soup for breakfast, lunch and dinner. This easy chicken casserole recipe satisfied my craving for something more substantial, and was so easy to pull together that it didn’t zap my limited energy. (I’m being a big dramatic, aren’t I?)
Anyway, we enjoyed our savory chicken dinner with a biscuit on the side, but you could toss it with your favorite whole grain pasta, brown rice, or even serve it over a baked potato.
Hmmmm . . . . sounds like a good idea. I love potatoes!
Ingredients
- 1 tablespoon olive oil
- ½ cup shallot, thinly sliced
- 2 cloves garlic, minced
- 8 ounces mushroom , thinly sliced
- 1 tablespoon rosemary, finely minced
- 1 1/2 cups low fat chicken broth
- 2 cups chicken breast, cubed
- 1 cup low fat sour cream
- ½ cup parsley, chopped
Instructions
- Combine olive oil, shallots and garlic to a nonstick skillet over medium heat. Saute for 10 minutes to soften. Add a little water as needed to keep the pan from getting too dry.
- Add mushrooms, rosemary, broth and chicken. Simmer for 15 - 20 minutes until nicely combined and heated through.
- Add sour cream and parsley.

We like easy, don’t we? For awhile there, I thought I needed to learn to cook all kinds of fancy recipes, now I opt for easy and healthy. Life is much simpler that way.
Wow, 3 weeks? That’s some cold. Glad you’re feeling better. Soup is great, but as a steady diet it gets tiresome after a bit. I wouldn’t get tired of this, though – lots of flavor packed into this. And of course the biscuit on the side would be so welcome! Good stuff – thanks.
