Easy Peasy Pizza and NuNaturals Stevia Winners

By Friday I’m working on saving a few calories for the weekend. It isn’t unusual for dinner commitments to derail my healthy eating plan, so this easy pizza recipe is a good place to start. It’s low in calories and very satisfying.

A simple tortilla makes a terrific pizza crust. I topped my tortilla with fresh tomato sauce, creamy beans, and sweet basil, but you could top them with anything you like. Leftover chicken and roasted vegetables would be a good choice too.

  • 2 medium tortillas
  • 2 large tomatoes, seeded and chopped
  • 2 tablespoons onion, minced
  • 1 clove garlic
  • ½ tablespoon olive oil
  • ¼ cup water
  • ½ cup white beans, rinsed and drained
  • ½ cup low fat mozzarella cheese, shredded
  • 1 cup basil, leaves
  1. 1. In a large saucepan over medium heat, add oil. Then add onion and garlic and cook for 4 - 5 minutes to soften. Then add tomatoes and ¼ cup water. Cook for 15 - 20 minutes until tomatoes are cooked down.
  2. 2. Preheat oven to 350.
  3. 3. In a dry nonstick skillet over medium heat toast the tortillas on both sides, and then move to a large cookie sheet.
  4. 4. Top each tortilla with tomato sauce, basil leaves, white beans and cheese. Bake for 10 minutes until cheese is melted.

      It was simple, that’s for sure. That’s what Friday meals are for me – quick and easy so I can get my housework done and enjoy the weekend.

    I feel the same way about Christmas parties and cookouts. It’s often hard to make good food choices that don’t undo the rest of the week’s worth of paying attention. This is a great and healthy way to enjoy what you love!

      The tortillas really were a great base. When my kids were growing up we used all kinds of pizza crusts. English muffins were a favorite too.

      Congratulations! I really do like the product, and can’t find anything bad to say about using it instead of sugar, other than that it is refined, so to me that takes away from the idea that it’s all natural.

    I love using tortillas for pizza – so nice and crisp! I go for pitas sometimes, especially if I want a heartier base to load up on pizza toppings, the Josephs high fiber variety are my favorite. They also get wonderfully crisp, and a bit nutty. Yum!

      Great tip Katie! You can find Josephs pitas here. I’ll have to give them a try. I love stuffing pita shells with all kinds of tasty ingredients.

    Wow…this still looks really good :)

    Just to let you know, you can use any white fish in that recipe. They make it here with Mahi Mahi, Snapper and Grouper so it should work with the white fish you’ve got handy as well.
