Several weeks ago I started sharing 5 ingredient recipes as a way to keep things simple in the kitchen. I wanted quick and healthy meals I could make in minutes.
While it’s obvious I love to cook, that doesn’t mean I want every meal to require complicated ingredients and lots of time in the kitchen. Truthfully, just a handful of fresh and flavorful ingredients is all it takes to make a meal.
I gave myself a few rules when it came to developing 5 ingredient recipes:
- Condiments most people have in their homes don’t have to be counted. Vinegar, mustards, olive oils, etc.
- I can use jarred items like spaghetti sauce you can easily pick up at the store (though most often I use a simple olive oil and lemon juice dressing).
Now that we’ve had a few weeks to gather recipes, I thought I’d share some of this family’s favorites with you starting with breakfast. You can never go wrong with egg dishes. Eggs are completely versatile and a terrific source of protein.
Smoothies and yogurt parfaits are another family pleaser, and kids love these! Sneak in some greens and they’ll never know they’re eating something healthy for them.
Seafood like cod, tilapia, and shrimp cook up quickly, so they always make the quick and easy meal list. Toss a and dinner is served.
Shrimp and Polenta Appetizers (We make a meal of these savory bites!)
Ground chicken, turkey, and beef can be turned into meatballs, or sauteed with your favorite veggies to make a simple meal. While meatballs take longer to cook, they’re a mix and go do something else in the meantime, so they often end up on the dinner table. It’s worth making extra and freezing them for evenings when there is no time to cook. Swap ground beef or chicken for the turkey in these recipes if that’s what you have on hand.
As they say, opposites attract, and while I’m not a dessert lover (I’m a chip and dip fan), my hubby loves a sweet treat. When Mr. Mike coaxes me into making a few 5 ingredient desserts I admit I can’t resist sneaking more than a few bites myself!
