If you haven’t guessed by now, yesterday was Kieran’s birthday. If you’ve visited before, you know that Kieran is my son’s girlfriend, and often contributes amazing recipes for me to share with you.
Today’s recipe comes from Kieran. POM Wonderful recently sent me a case of POM Pomegranate juice. Naturally, I shared a few bottles with Kieran in the hopes that she would create one of her fantastic desserts with it – which she was gracious enough to do.
Not only was I impressed that POM is truly 100% juice – nothing added, I really enjoyed the taste. This juice is naturally sweet and packed with antioxidants called polyphenols, tannins and anthocyanins. Antioxidants slow the damage to our cells caused by free radicals. The oxygen in our bodies naturally produces these free radicals, so antioxidants are an important nutrient we need to clean them up.
Anyway, enough of that lesson. On to Kiery’s unique and simple recipe for a flourless cake packed with those wonderful antioxidants. How often can you say that about a cake?

Flourless Almond Orange Cake with POM Pomegranate Juice
Serves 8
2 large oranges- with peel on, washed
6 eggs
1/4 cup POM Pomegranate Juice
1 1/4 cup sugar (fine)
1 1/4 cup almond meal
1 tsp baking powder
Preheat oven to 350.
In a large pot, cover oranges with water and bring to a boil over medium heat. Simmer for 45 minutes. Remove oranges from water and cut in half and remove seeds.
In a blender process oranges until smooth and add POM juice.
Mix eggs and sugar with whisk or whisk attachment until pale and stiff (5 min with mixer, 10 by hand).
Fold in orange and POM puree, then fold in baking powder and almond meal.
Pour into greased & floured 10 in cake pan, and bake for 40 min or until knife comes out clean.
What’s good for me in this dish?
Pomegranate is high in potassium and antioxidants. Potassium helps regulate water balance and muscle function. This is very helpful for people with high blood pressure and heart disease. The antioxidants help with blood oxidation and blood lipids. It is also thought to help prevent prostate cancer.

Pomegranate and orange sound like a wonderful combination! I can’t believe this is under 300 calories!
Me either, but there isn’t a whole lot of fat like there is in most cakes. Just the eggs and the flour. Amazing!
I will have to bookmark this cake for the next time my sister visits. She sure would have enjoyed this flourless version (she has celiac). I love POM juice and usually have a bottle in my fridge to mix with club soda for a great, refreshing drink. Happy Birthday to Kieran!

There’s nothing that beats the wonderful flavor of pomegranate. I love the fruit just as is but I could handle it soaked into your cake like it is!
