Crazy blog title, isn’t it? It’s true! Or at least, it’s my truth. Fresh of any food or culinary herb will taste the best. Canned or dried will always have a flat flavor. Frozen is your best bet if you can’t find, or afford, the fresh ingredient you’re looking for.
Confirmation of my belief came in a cooking class I attended recently. The chef is amazing. Guess what? Every ingredient in his menu was fresh. Nothing dried, nothing canned. No wonder it tasted heavenly!
Truth is, most of us are home cooks on limited budgets who can’t afford all those fresh ingredients. Really? That used to be my excuse. My advice? Next spring make a small investment in seeds and some good dirt. That will buy you a small vegetable garden, or a container garden that will produce fresh herbs and produce for the summer, and enough extra to freeze for the winter months. It really doesn’t take much space. My garden is 10 x 10, and I have plenty for two, and sometimes enough to give away. Not only that, I had so much fun planning my potential garden, and watching everything grow (and some things struggle and die!).
So gardening isn’t your thing? Then buy in season. Yep! Cheap equals fresh because you can find it in abundance. So it follows that you can now cook fresh. No excuses there!
Bottom line? If you want your food to taste great and improve your health and that of your family, cook with fresh ingredients.
