It’s 5 Ingredient Friday and I’m here to share this breakfast parfait I whipped up with a custom blend of granola I created over at Bear Naked Custom Granola.

You can serve any fruit in these breakfast parfaits. Berries and bananas would be a kid pleaser or use any in-season fruit from your produce counter. Mr. Mike likes his breakfast parfait served for after dinner dessert with a pile of whipped cream on top (I guess that makes it a dessert parfait for him). Why not, right? It’s the holiday season so we can indulge a little!

Fruit and Granola Breakfast Parfait with Apples, Pomegranate, Bear Naked Granola and Greek Yogurt

- 1 ½ cups Bear Naked granola, or your favorite low sugar brand
- 2 medium apples, chopped into smaller pieces
- 1 ? cup pomegranate seeds
- ¾ teaspoon cinnamon
- 6 tablespoons plain low fat Greek yogurt
- Reserve 1/3 cup pomegranate seeds for garnish.
- Combine the apples, pomegranate seeds, and cinnamon in a microwave safe bowl. Microwave on high for 3 minutes, stir, then microwave on high another 2 - 3 minutes until apples are soft.
- Stir fruit and using slotted spoon place into six small ramekins.
- Top each with 1/4 cup granola and a dollop of Greek yogurt.
- Garnish with pomegranate seeds.
