Friday night is game night at my house. When the clock chimes 7 we’re sitting in the stands waiting to sing the National Anthem, and proudly cheer for our local high school’s Interlake Saints football team. We’ve been attending my son’s football games in one form or another for close to 20 years. This year is his first year as the head coach.
Meals on game nights are always a toss up. But rather than grab something quick on the way, it’s just as time-saving to pull together a pizza. Store bought crusts make this an easy proposition for dinner. All I have to do is add some leftover chicken, a sweet barbecue sauce and some creamy blue cheese and I have a buffalo chicken pizza. Don’t forget some spinach (you have to get those greens in), and some hot sauce. A quick beer and pizza before the game. Can’t beat that! I can’t wait for Friday! Go Saints!
Buffalo Chicken Pizza Serves 6 1 large Culinary Circle Multi-grain Stone Baked Pizza crust ½ cup barbecue sauce 1 cup chicken thighs, shredded ¼ cup red onion, thinly sliced 1 cup spinach, chopped ¼ cup blue cheese, crumbled ¼ cup cheddar cheese, shredded 1 dash hot sauce, to taste Directions
- Preheat oven to 450.
- Place pre-cooked pizza dough on a cookie sheet and top with barbecue sauce, chicken, onions, and spinach. Top with hot sauce to taste, then sprinkle one half with blue cheese and the other half with cheddar cheese.
- Bake for 10 – 12 minutes until cheese melts.
