Are you looking for a satisfying lunch? Something that doesn’t leave you hungry an hour later? The other day I couldn’t stomach another blah sandwich, or leftover frozen soup. (I have a freezer full of soup made from leftovers in the frig. They make a quick, healthy lunch, but you can only eat so much of it!)
I decided to hunt through the pantry. Canned beans (great for protein), romaine lettuce and tomato (getting those nutrients and some crunch), and Flatout Flatbread.
Haven’t heard of Flatout? Fantastic stuff! The company makes a variety of these healthy flatbreads. Flatout is high in fiber, whole grains, and low in calories. Even better, they taste really good!
I threw all my great ingredients together with some light Caesar dressing, and just a bit of goat cheese (no Parmesan in the frig). Rolled it up in my flatbread, and had a feast!
- 4 cups lettuce, romaine, chopped
- 1 can cannelini beans, rinsed and drained
- 2 large roma tomato, seeded and chopped
- ½ cup light Caesar salad dressing
- 8 tablespoons goat cheese
- 4 ea FlatOut Flat Bread
- Combine ingredients and serve with FlatOut flat bread.
