Do you have family members and friends that are always on the hunt for gluten free options at your holiday parties?

Gluten Free Cheesy Quinoa Stuffed Mushrooms

I certainly do, so this past week I’ve been experimenting with appetizer recipes that will please my gluten free buddies. These cheesy stuffed mushrooms rose to the top of the list in no time flat.

 Gluten Free Stuffed MushroomsSince quinoa is such a popular gluten free grain (it’s really a seed, but most folks refer to it as a grain), I decided it would be perfect packed into these very large cremini mushrooms.

These easy stuffed mushrooms came out of the oven with a nutty aroma, and made a colorful, gluten free appetizer for my holiday guests.

Cheesy Quinoa Stuffed Mushrooms

Shake It Up! If quinoa isn't your thing, brown rice would work equally as well.

Ingredients

  • 12 large mushrooms, cleaned with gills scooped out
  • 2 cups quinoa, cooked
  • 1 cloves garlic, minced
  • 2 tablespoons red onion, finely minced
  • 1 tablespoon thyme, leaves, minced
  • ⅛ cup parsley, finely chopped
  • 1 tablespoon olive oil
  • ½ cup mozzarella cheese, finely shredded

Instructions

  1. Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper or foil and spray with cooking spray.
  2. Combine ingredients in a bowl, then take a tablespoon and scoop the mixture into the mushrooms.
  3. Bake for 15 - 20 minutes until the cheese is melted and the mushrooms are slightly tender.
