



When it comes to making work day breakfasts, creativity is not my thing.
Most weekdays the morning menu includes oatmeal, smoothies, or egg muffins. If I’m completely bored with my meal choices, I’ll toss berries on top of yogurt and drizzle it with honey.
But the weekends are a different story.

When Saturday morning arrives, I have time to play in the kitchen. These days I’m working on perfecting my pancake and waffle making skills.
The family knows that pancakes and waffles just aren’t my thing. There isn’t a pancake that I can’t burn to a crisp, and waffles turn out chewy and flavorless. It’s not a pretty sight.
But not this time!

Gluten Free Banana Waffles
This time I had help from my long time friend, The Weight Watchers New Complete Cookbook.
With a little practice, I had a tender waffle that was perfectly cooked inside and out. And the addition of sweet bananas and chia seeds gave my waffle recipe a boost of nutrition too.

That’s Mike, who is patiently waiting for something else besides oatmeal and eggs. If he’d been willing to pose for a picture eating his waffles, I would have shared, but he’s a bit camera shy in the mornings.

Ingredients
- 1 medium banana, mashed
- 1 tablespoon coconut oil, melted (or canola oil)
- 1 cup low fat milk
- 1 large egg
- 1 large egg whites
- 1 teaspoon vanilla extract
- ¼ cup brown sugar , I used Splenda Brown Sugar Blend
- 2 tablespoons honey
- 2 tablespoons chia seeds (you can omit these if you don't have them)
- 2 ½ cups Bob's Red Mill Gluten Free Flour Mix, or whole wheat pastry flour for a non-gluten free waffle
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
Instructions
- Preheat waffle maker.
- Combine banana, coconut oil, milk, eggs, honey, brown sugar, vanilla and chia seeds.
- In another bowl combine flour, baking powder and cinnamon.
- Gently fold the two together. Don't over mix or waffles will be tough.
- Drop into waffle wells according to the manufacturers instructions.

I think I have not eaten waffles for a long long time. How could I have forgotten that….hmmm. Now I hope someone makes for me
Your waffles look really good. I had been making pancakes the past few days too, but savoury ones. I added chopped chives and chillies. They are really good dipped in sweet chilli sauce. You can try that too. Hope you have a great weekend. More cooking and baking

Hi Ray! Now that were empty nesters our weekends are typically free to do what we please, so weekend mornings are a favorite time to have fun in the kitchen.

I’ve used to use a lot of flax seed, but I’m really liking the chia. It’s much easier to work with.
These look terrific! I don’t have a waffle iron – I really need to get one. I like pancakes, and they’re a more than adequate substitute, but waffles just hold all the syrup so nicely! Good stuff – thanks.

I have the worst time with pancakes. They usually come out burned on the outside and gooey on the inside. Thus the need for a waffle iron. Have a terrific week.
The maple trees here in New Hampshire are just being tapped. I’ll have a bottle of syrup from friends shortly. Pouring some over one of your banana waffles sounds like a nice way to start a weekend morning.

How lucky are you! I pay a fortune for a small bottle of 100% maple syrup, but after looking at the ingredients in the typical store brands, it’s worth every penny.
I saw GF flour in Trader Joes a few weeks ago as a new product and thought it is a wonderful product for GF recipes! We make waffles once in a while on weekends but lately haven’t’ had much time to prepare. Now I feel like I want waffles! I should make it for lunch tomorrow as weekend is over very soon!
I saw that at Trader Joe’s too. We don’t have to eat gluten free in this house, but so many people do, that it’s nice to have it on hand.
Oh wow, wow I adore these waffles…with banana? I have a new waffle iron and this recipe is so on my to do. Next Saturday!

I just have a small waffle iron for the two of us, but I remember growing up and my mom’s family sized waffle iron. When she took that out, we were all happy campers.
