Fresh Green Beans and Pan Roasted Onions

This easy green bean recipe with spicy red onion makes a terrific side dish.

Pan Roasted Onions and Green Beans

You can’t go wrong with balsamic vinegar, and I love spicy red onions. Fresh garlic enhances a splash of olive oil, sliced mushrooms and fresh thyme, and adds a savory flavor to this green bean recipe.

Ingredients

  • 1 lbs Green Beans -- Trimmed
  • 1/2 tbsp Olive Oil
  • 2 ea Small Red onions -- cut in 8 wedges
  • 1/2 cup Chicken Broth
  • 1 tbsp Balsamic Vinegar
  • 2 tsp Brown Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. Steam beans in a pot with a vegetable steamer until crisp-tender, approximately 20 minutes.. Heat oil in large non-stick pan and saute onions until lightly browned. Add chicken broth and reduce sauce for 3 - 4 minutes. Stir in vinegar, brown sugar, salt and pepper. Add green beans.
