It’s happy hour at Mother Rimmy’s house and we’re serving artichoke dip!
I’ve decided we need a new rule, my husband and I. If we work hard all week, then we deserve a really terrific happy hour on Friday.
I’m starting off my first happy hour by lightening up a cheesy artichoke dip recipe.
I’ve used frozen artichoke quarters, instead of canned artichoke hearts to reduce the sodium, and so that I’ll have a fresher flavor. I also replaced higher fat versions of mayonnaise, sour cream and cheese, with their lighter versions.
This cheesy dip was served with toasted french bread rubbed with a clove of garlic, and baby romaine lettuce leaves.
The original recipe from AllRecipes.com contained 248 calories and 20.2g of fat. My version has 158 calories, and 11.61g of fat.
Ha! I win! Happy cooking!
- 12 ounces artichoke quarters, chopped
- ½ cup light mayonnaise
- ½ cup light sour cream
- ½ cup red onion, minced
- 4 slices muenster cheese, chopped
- 1 tablespoon lemon juice
- salt and pepper
- 1. Preheat oven to 400 degrees.
- 2. In a medium bowl, stir together mayonnaise, sour cream, Muenster cheese and onion. Mix in artichoke, lemon juice, salt and pepper. Transfer mixture to a shallow baking dish.
- 3. Bake 20 minutes until bubbly and browned.
What’s good for me in this dish?
Artichokes are low in saturated fat, cholesterol and sodium, and a good source of Thiamin, Niacin and dietary fiber. A natural diuretic and digestive aid.
