You won’t miss the mayo! This creamy egg salad sandwich uses heart-healthy avocado, crunchy celery, and sweet green onion to give it loads of fantastic flavor.
You’ll find an over-abundance of egg recipes here at Mother Rimmy’s, this is because at the very start of my weight loss journey I could eat egg whites for zero Weight Watchers points. They made a breakfast, lunch or dinner I could feed the entire family, and they were a healthy source of low-calorie protein for me.
Besides, who doesn’t like eggs – weight watching or not?
While avocado used to be relegated to Mexican dishes (in my life experience anyway), lately they’ve been making an appearance in all kinds of dishes. I’ve even seen them pitted, then roasted in the oven.
Remind me that I need to try that sometime soon!
But on this particular day, I thought smashing avocados with Greek yogurt would be a terrific idea to make my egg salad recipe even healthier. Egg salad needs crunch, so bits of celery and green onion were added to the bowl as well.
I have to say, this is the way to eat an egg salad sandwich though I could easily pile it on lettuce leaves and be just as happy.

Healthy Avocado and Egg Salad
- 1 medium avocado, well mashed
- 1/4 cup low-fat plain Greek yogurt
- 1 teaspoon Dijon Mustard
- 1/2 cup celery, finely chopped
- 2 large green onion, thinly sliced
- 1/4 cup parsley, finely chopped
- 2 large eggs, cooked and chopped
- 6 large egg whites, cooked and chopped
- Combine avocado, yogurt, and mustard in a bowl.
- Fold in remaining ingredients.
