Here at the Rimkus house, we’ve decided to serve brunch this Easter. In fact, I thought a crepe bar would be a whole lot of fun, so crepes it is!

Crepes by themselves would be fine if I were the only one eating, but I’ll need to serve a few appetizers while we build our crepe  bar. Otherwise, the Rimkus men will lurk around the kitchen asking for handouts.

During a walk through Costco a few years ago,  I discovered a package of ruby red Campari tomatoes. They were just the right size for stuffing – not so small that stuffing them would be difficult – and not so large that they could no longer be considered an appetizer.

The first time I stuffed these little gems with basil and parmesan, I was hooked.

Since then I’ve stuffed Campari tomatoes with all kinds of fillings, but I’m partial to the Tarragon Chicken Salad and Salmon with Cream Cheese and Chives.

This Easter holiday I’ll take the eggs from the Easter Bunny and turn them into an egg salad. I’ll combine the eggs with the fresh tarragon from the chicken salad recipe, and the cream cheese from the salmon recipe for my Campari filling.

Then I’ll have a healthy appetizer that uses up the abundance of Easter eggs, and uses my lovely Campari tomatoes.

    YUM, I think the salmon one actually sounds the best to me for some reason!! I typically crave sugar at this time of day, but that photo made me salivate :) Delicious.

      Funny – I thought the salmon would go over well this Easter, but it was the mushroom, bacon and goat cheese. I hope you enjoyed your weekend. :)

    Easter crepes sounds fabulous! We are going out to brunch for a big family gathering, but if I were making creeps, my favorites are creeps Suzette. And my kids love custard, berries, and LOTS of whipped cream :-). Happy Easter to you and your family!!

    Wow on the crepe bar. Lol, I still haven’t mastered proper crepe making but yours look gorgeous in the photos!

    Crepe Ideas:
    – Bacon, Egg, Cheese, Peppers and Onions
    – Strawberries, Bananas, Vanilla Creme
    – Swiss Cheese, Spinach, Mushrooms and Hollandaise
    – Ham, Tomatoes, Eggs, Cheese and Broccoli
    – Artichoke Hearts, Goat Cheese, Spinach and Roasted Red Peppers
    – Chicken, Salsa, Cheese, Onions and Peppers

    I must also remember those cute stuffed tomatoes. I always struggle with light bites before a meal since I’m not a big app person on my own, I usually just eat the app as the meal!

      We haven’t mastered a proper crepe, but we sure enjoy trying. I’m totally with you – I can make a meal out of appetizers and often do. It makes my husband happy when we eat out. It’s a whole lot cheaper when you turn an appetizer into your entree. I hope you enjoyed your Easter :)
