I love artichokes – they’re a healthy eater’s dream. Artichokes are low in calories and fun to eat.
How to Steam an Artichoke
Cut off the top inch of the artichoke. If it has a long stem, cut the stem off.
Steam in a large pan with a vegetable steamer for 30 minutes until tender. You can boil in water, but I prefer steaming to boiling. I like to keep all the nutrients in my food. Be sure to cook until tender, I take a small knife and insert in the stem end of the artichoke. If it’s tender, then the artichoke is done.
Place artichoke on a plate and serve with whatever sauce you like. To keep calories down, I dip mine in a low cal ranch dressing. Other people dip in butter or mayonnaise. You could use a fat free or low calorie mayo.
To eat, pull off a leaf and dip in sauce. Scrape the meaty part of the leaf off with your teeth. Yum! When you reach the center, take a spoon and remove the choke. The part that is left is the best part, the heart.
