A Dessert Worth the Calories – Kieran’s Lemon Bars

Some desserts are just worth the calories, and Kiery’s lemon bar recipe proves that theory. The crust literally melts in your mouth, and the filling is bright and lemony and oh-so creamy.

Crust Ingredients:
1 cup cold butter
1/2 cup powdered sugar
2 cups flour

Filling Ingredients:
4 eggs, beaten
2 cups sugar
1/4 cup flour
6 Tbsp. Lemon juice
1 tbsp.grated lemon peel

Preheat oven to 350. Cut butter into 1/2 cup powdered sugar, and 2 cups flour until it’s the texture of cornmeal. Press mixture into a 9 x 13 inch pan. Bake for 15 min.

In a separate bowl combine flour and sugar, mix together. Stir in beaten eggs, lemon juice and grated lemon peel. Pour into the cookie crust. Bake for 25 minutes at 350 F.  Cool and sprinkle with powdered sugar. Cut into squares.
