Light and Crunchy Broccoli and Bell Pepper Salad

I know broccoli is good for me, most of us do. Packed with all those great phytonutrients (love that word!), broccoli is one of those cruciferous vegetables nutritionists are always telling us to eat.

Still, just try getting a kid to eat a stalk of steamed broccoli.

Broccoli and Red Pepper Salad

Probably not going to happen, but turn it into a tasty broccoli salad, and you’ll be surprised!

Crunchy veggies and walnuts tossed with a sweet sauce make this a healthy salad that will get your kids to eat their broccoli now for sure!

Light and Crunchy Broccoli and Bell Pepper Salad

Ingredients

  • 4 cups broccoli florets, rough chopped
  • 1 large red bell (capsicum) peppers, chopped
  • ½ cup red onion, chopped
  • ½ cup walnut pieces
  • ¼ cup parsley, minced
  • 3/4 cup light mayonnaise
  • 2 tablespoons cider vinegar
  • 2 tablespoons sugar
  • salt and pepper to taste

Instructions

  1. 1. Combine mayonnaise, vinegar and sugar in a small bowl.
  2. 2. Combine remaining ingredients with mayonnaise.
  3. 3. Refrigerate for 30 minutes before serving.
