I’ve already grumped about the weather in a previous post, but today I’m happy to report that Seattle has had glorious weather this week. Not only was the sky an incredible shade of blue, but you could step outside without a down jacket. Lovely!

Chicken Salad with Quinoa and Apricot Vinaigrette

Lovely enough to inspire this light, summery salad with a sweet and spicy apricot vinaigrette. Leftover chicken and quinoa provide the protein needed to turn this salad into a meal, and an earthy goat cheese ties it all together. If you have a few calories to spare for the day, I think slivered almonds would take this chicken salad recipe over the top.

Serves 2 large salads

Light and Healthy Chicken Salad with Quinoa and Apricot Vinaigrette

Ingredients

  • 2 tablespoons sugar free apricot jam
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons water
  • 1 tsp dijon mustard
  • 1 tablespoon olive oil
  • 4 cups baby spinach
  • 1 cup quinoa, cooked according to package directions
  • 1 cups chicken breast, cooked and chopped
  • 1 large apple, cut into bite sized pieces
  • 4 medium green onion, sliced
  • 4 tablespoons goat cheese, crumbled

Instructions

  1. 1. Combine jam, vinegar, water, dijon and oil in a blender and blend until combined.
  2. 2. Toss salad ingredients with dressing and serve.

Quinoa can be purchased in the health food aisles of most grocery stores. Look for quinoa in the bulk bins. In most cases, it’s much cheaper to purchase in bulk than by the box.

      I have to say, I'm quinoa crazy. I love the texture and the color. Not to mention that it works so well as a replacement for rice, but is packed with protein.

    I've had quite a few different chicken salads, but I love the addition of quinoa in this version. I can imagine the fabulous texture it would give to the same old chicken and lettuce, upping it to something so much better :D

      I love using sugar free jams in dressings. They add a fruity sweetness that works so well in a vinaigrette.

    laud to all, so glad you are getting some decent weather.... please send us some of those clouds, it is a sad state here, in a drought where we normally have more rainfall than you guys, and sadder,the two states over to the east are under water from flooding .... strange times but this salad is not, like the apricot twist

    When the skies cleared, we always used to break into song, "the bluest skies you've ever seen are in Seattle..." There is nothing like a sunny day in the Northwest to chase away the blues. Love the salad; still trying to convince my family that they like quinoa.

      I love the natural jams. It only takes a few tablespoons, so while they are a bit expensive, you don't need much.

    This was a very interesting salad to learn about. I can't wait to see a grilling recipe! Also if you have some easy quick meals for a gal that is moving in with her bf for the first time and I need some good easy recipes!
