Light and Healthy Salad Recipes for Your Memorial Day Barbecue

If you’re looking for a light and healthy salad to balance out the calories in the ribs and burgers at your Memorial Day barbecue, I have a few to share. That’s probably an understatement – I’m the queen of salads.

These salads are great for a barbecue because they don’t contain ingredients that will spoil quickly if left out. I love that safety factor. It’s easy to get side-tracked and leave food out longer than is should be to be considered safe to eat. I’m not big on giving my guests food poisoning. :)

This salad is a recent addition to my salad repertoire. It was a hit at my birthday party, and generated several requests for the recipe. The picture doesn’t do it justice, but take my word for it, people were talking about it the next day.

Mediterranean Chickpea and Feta Salad

This salad will please the vegetarians in the crowd. Creamy chickpeas are a perfect addition to any salad because they’re packed with protein and fiber. Combined with Mediterranean flavors and tart feta cheese, this is a festive salad.

Chinese cabbage salads have been popular for years. They are inexpensive to make and can feed a large crowd. I love Kathleen’s version. She’s added sweet and chewey dried cranberries to give this salad a punch of color.

Spinach and Mandarin Orange Salad with Pomegranate Balsamic Vinaigrette

This salad has become a classic in recent years. You’ll see versions of it using apples, strawberries and pears. This recipe uses goat cheese, but blue and gorgonzola works equally as well.

What are my plans for Memorial Day? We are going to pay our respects to my father-in-law. He was a wonderful father, grandfather and a proud veteran. We miss him always.

Oh my gosh I don’t know which is more divine, the Mediterranean chick pea salad or the spinach and Mandarin orange! Chick peas are a favorite and I use them quite frequently. The spinach with orange sounds fabulous!

I usually buy the canned beans, but as soon as the kitchen remodel is done I want to try the dried beans. I keep hearing how much better they are.

Thank you! It’s been pretty rainy in Seattle, but then we are used to the rain, so it doesn’t stop us from grilling.

I like those Chinese cabbage salads too. You can put everything but the kitchen sink in them.

We had a nice spring earlier in April, but now we are stuck with pouring rain. It doesn’t stop me. I put on a hat slicker and hit the garden anyway. The weeds could care less about the rain. :)

That’s true. My daughter isn’t vegan, but she is a vegetarian, so I try to provide dishes that would please her. Besides, it’s good for the rest of the family too!
