If you are familiar with the Weight Watchers weight loss plan, you know that instead of counting calories, members count points. It’s really just calorie counting simplified.
Last night, I was out of points for the day and needed a low calorie, satisfying meal. This baked cod really made my night. Baked in the oven in foil, it came out very moist and flavorful. There was no need to add a sauce to it. Hooray! A three point meal! I added Green Bean, Pepper and Onion Saute for just one more point and I saved the day.
8 ounces cod, filets
1 small lime, zested and squeezed
1 clove garlic, minced
1 small shallot, thinly sliced
2 sprigs dill
- Preheat oven to 350.
- Spray two pieces of foil large enough to contain each filet of cod with cooking spray.
- Place cod filets in the center of each piece of foil and top with garlic, shallot, lime zest, lime juice and dill sprigs.
- Fold and seal foil.
- Bake 20 – 30 minutes until fish is no longer translucent.
