There is truth to the saying that opposites attract. This is surely the case with Mike and I.
I’m a neatnik – Mike not so much.
My idea of camping is a cabin in the woods with the works – heat, shower, fully stocked kitchen. Mike can sleep in the back of the truck.
I’m happy staying home, curled up on the couch, reading a good book. Mike loves to be out and about.
Still, with all our differences, our marriage works for us. We’re fast approaching our 30th anniversary.
We have opposite tastes when it comes to spicy foods too. As far as I’m concerned, the hotter – the better. I see Mike’s face turning fascinating shades of red and purple when I serve him my latest chili, he thinks I can be a bit heavy handed with the spices.
When it comes to my most loved Mexican spice, I can’t resist the smoky heat that chipotle adds to my Mexican recipes, and it’s perfect in this chicken burger.
Foodbuzz was kind enough to send me a few jars of Pace salsa – mild salsa. This meant I needed to kick up the heat. Another opportunity to add some chipotle to my Mexican chicken burger.
The salsa I added to the burger mix gave my ground chicken breast much needed moisture, and I promise I compromised on the heat. Mike wasn’t reaching for a gallon of water to finish his meal.

Chipotle Chicken Burgers with Pace Salsa
Serves 4
1 pound chicken breast, ground
½ cup oatmeal
1 large egg white
½ tsp chipotle powder, if you don’t like heat, use 1/4 teaspoon
¼ cup salsa, Pace Salsa
8 tablespoons salsa, Pace Salsa
4 tablespoons light sour cream
4 ea Orowheat Sandwich Thins
4 tablespoons low fat cheddar cheese, shredded
1. Combine chicken breast, oatmeal, egg white, chipotle powder, and 1/4 cup Pace salsa in a large bowl.
2. Heat a large non-stick skillet over medium heat. Spray with cooking spray. Quarter meat mixture and scoop into your palm. This mixture is very moist so mold lightly in your hand, drop onto the pan. Lightly shape into a patty. Cook 8 minutes per side until chicken is cooked through, but don’t over cook, or it will be dry. Watch carefully.
3. Mix remaining Pace salsa with sour cream.
4. Toast sandwich thins with 1 tablespoon cheese each.
5. Serve chicken on buns with Pace salsa dressing and your favorite veggies.

Those look delicious! My boyfriend and I sound just like your husband and yourself. I am a neat freak, him not so much. I love spicy food, he can barely eat it. I am a little more “to do” list oriented while he isn’t at all. Haha, good to know we have some hope in a long last relationship since you are living proof!
We do sound alike, don’t we? It’s not been easy and we’ve had our rough patches, but we’ve survived so far. You have lots of hope and lots of love ahead.

My husband and I have very opposite personalities, I’m very type A (surprise) and he is as calm and easy going as they come. We have most other things in common tho (except that he loves country music and I loath it! He’s a meat and mashed potatoes kindof guy and I’m a flexitarian.

I was so excited when I saw this recipe, it sounds so good! We both looooove spicy foods. I never thought to make a grilled chicken sandwhich like this. YUM!

I have to say I’m not a big country music fan either, and my hubby’s a meat and potatoes guy, but I’ve slowly converted him. He eats meat free once a week and doesn’t complain.

I like the oatmeal as a binder. Especially in meats where there isn’t a lot of fat to hold the burger together.

Some days it’s not easy, but in the end it all works. I love a good turkey or chicken burger, so these made me happy.
I can find similarities with both of you. And I have to say, and this is not a compliment that you don’t look like you are married for 30 years. Regarding hotness I would agree more with your husband. I like mild meals not very hot. So I would cut back on the chipotle powder. Other than that the burgers look so juicy and mouthwatering I could eat them in a minute!

I love chicken burgers, so much more tender than turkey burgers! I never thought of adding chipotle, what a wonderful idea! And I love salsa, just add a slice or two of Monterey jack and I would be in heaven!

Delicious recipes like this make adding more ground chicken or turkey to our diets so much easier. That’s one fabulous burger. I have to admit I’m just not a fan of low fat cheese. I have to save the calories some other way.

I would agree with you that some brands of low fat cheese don’t melt well. Kraft has a brand that works well for me.
I am with you on the camping. The great outdoors is only great if there’s a decent shower and proper cooking facilities. These chicken burgers are the perfect campfire treat – I love the little kick of spice.

Your blog made me so happy when you said that your partner and you have been together for almost 30 years. Sometimes I think that the only thing that Phillip and I have in common is that we live on the same planet (and love each other very much). I enjoy being active, spicy food and travelling. Phillip works very hard (so that hopefully, one day we will be able to live a very comfortable life where I can be a stay at home Mum) and so like to come home and relax. He can’t handle chilli at all! Well, I have actually increased his heat tolerance over the past 4 years by adding chilli to everything…but what can I say, I still love him so much! Happy Valentine’s Day!!
