I don’t know about you, but I grew up on mashed potatoes.
Mom would mash the potatoes with butter and milk and they were always russets. Fantastic to be sure.
But if you haven’t tried mashing other vegetables – you’re missing out.
Just take a cruise through Google and you’ll find recipes for mashed cauliflower, and any other vegetable you can name.
I haven’t tried this garlicky mashed root vegetable recipe from SparkPeople, but it’s on my list!

- 2 cups parnsips, cubed
- ¼ cup onion, finely chopped
- 1 clove garlic, finely minced
- 1 tablespoon thyme , leaves
- ¼ cup Parmesan cheese, shredded
- ¼ cup low fat sour cream
- Steam parsnips, onions, garlic and thyme until tender in a vegetable steamer - about 8 - 10 minutes.
- Place in a bowl with remaining ingredients and mash or blend with a mixer to desired consistency.
- Season with salt and pepper.
