I love this colorful salad. Light and pretty to look at, who could resist? I added 1/2 cup fat free feta cheese to add some tang, and reduced the olive oil 10 1 tbs to reduce the fat. You couldn’t tell the difference. This nutrition information provided doesn’t include the feta, or the reduced amount of fat.

2 medium tomatoes seeded and diced
1 cup diced seedless cucumber
1/4 cup scallions chopped
1/4 cup coarsley chopped fresh parsley
1/2 cup chopped yellow or orange bell pepper
1/4 cup Kalamata olives pitted and coarsely chopped
1/2 tsp dried oregano
2 tbs olive oil
1 tbs white wine vinegar
salt and pepper to taste
- Combine tomatoes, cucumber, scallions, parsley, olives, oil, and vinegar.
- Add feta if you choose and season with salt and pepper.
