Turn Your Next Salad Into a Pizza – Mediterranean Shrimp Salad Pizza

Salad pizza? Pizza salad? Whatever you’d like to call it, turning your favorite salad into a pizza is a terrific idea!

Too bad it wasn’t mine. I can’t recall where I originally saw the inspiration for this easy pizza, but I’m happy the concept stuck in my mind.

I’m a big Mediterranean salad fan, so it was a natural choice for my salad pizza – pizza salad.

All I had to do was combine the salad ingredients in a bowl, top a pre-made pizza crust with a simple dressing, then spread my salad on top. That’s what I call a pizza salad . . . salad pizza . . .

Mediterranean Shrimp Salad Pizza

Serving Size: 4

Mediterranean Shrimp Salad Pizza

Ingredients

  • 1 large Whole Wheat Boboli Pizza Thin Crust
  • 1 cup salad shrimp
  • 1 tablespoon olive oil
  • 4 tablespoons walnut pieces
  • 3 tablespoons capers
  • 2 tablespoons onion, finely chopped
  • ½ cup red bell (capsicum) peppers, chopped
  • 1 teaspoon oregano
  • 1 pinch red pepper
  • ½ teaspoon lemon zest
  • ¾ cup low fat yogurt cheese
  • ½ teaspoon oregano
  • 1 ½ teaspoons garlic, finely minced
  • 1 teaspoon lemon zest
  • 1 teaspoon turmeric
  • ½ cup low fat feta cheese, crumbled
  • 2 cups baby spinach

Instructions

  1. Preheat oven to 350 degrees and bake the pizza crust for 8 - 10 minutes until lightly crisped.
  2. Combine salad shrimp, olive oil, walnuts, capers, onion, bell pepper, 1 teaspoon oregano, 1/2 teaspoon lemon zest and pinch of dried red pepper in a large bowl.
  3. In another bowl combine yogurt cheese, remaining oregano, garlic, remaining lemon zest and turmeric.
  4. Spread cheese mixture over pizza crust and top with spinach and then shrimp mixture. Sprinkle with feta cheese and serve.

I’m hooked on the stuff. It’s so easy to make – a carton of yogurt and cheesecloth. Just drain for up to 24 hours, depending on how thick you want it. We like ours the consistency of a really thick Greek yogurt. Hubby loves it topped with fruit, nuts and honey. Have a great weekend!
