Healthy Memorial Day Barbecue Recipes

On Monday, as we remember those who have died in service to our country, at our barbecue we’ll be serving up a few lower calorie recipes to share with family and friends like this refreshing Asian Kale salad.

And since not everyone appreciates kale’s leafy greens, we’ll add this easy pasta salad to the table too.

If we don’t grill up a juicy burger, I’m guessing there will be a mass exodus out the door, so these beef burgers stuffed with provolone and mushrooms ought to do the trick!

As for me, I’ll opt for this lower calorie grilled chicken recipe. The marinade is amazing – orange juice, brandy, molasses and hot pepper sauce to give it a little kick.

Now all we need is a plate of grilled peaches for dessert and everyone will be happy, including us weight watching folks.

Asian Kale Salad with Slivered Almonds

Total Time: 20 minutes

Serving Size: 4

Ingredients

  • 2 cups English cucumber, diced
  • ½ medium onion, finely chopped
  • 8 cups kale, chopped
  • 1 medium orange , juiced
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 clove garlic, finely minced
  • ½ tablespoon honey
  • 1 tablespoon rice vinegar
  • ½ inch piece ginger, finely minced
  • ½ cup almonds, slivered
  • 2 cups cooked brown rice (I used black rice from PCC)

Instructions

  1. Combine cucumber, onion and kale in a large bowl.
  2. Combine orange juice, soy sauce, sesame oil, garlic, honey, vinegar and ginger in a small bowl.
  3. Toss dressing over kale and and add rice (use your judgement as to how well dressed you want your salad).
  4. Toss in almonds and season with salt and pepper.

I recently attended a cooking class where they made cashew cream and used it to top baked peaches. It was so easy too – just water and raw cashews blended until they were the consistency of a heavy whipped cream. Amazingly delicious!

The best thing about kale – besides the nutrition profile – is it’s affordability and comes in so many varieties. I’ve been buying purple kale lately. In the past I sauteed it because it can be kind of tough, but then I attended a class at PCC and they made a massaged kale salad. It was fantastic!

Last year was the first time I’ve grilled stone fruits and it really is the way to make a calorie friendly dessert!

Those grilled peaches are making me wish I had a grill! I just love the flavor of grilled fruit – especially topped with a little dollop of vanilla ice cream melting over the top.

Your healthier holiday feast does look quite tasty. I’m afraid we were a bit more indulgent with frozen cocktails and prime steaks. Unlike my family and guests, I limit myself to one drink and only eat a fraction of my meat while others are happy to finish it for me. The grilled peaches would have been welcome at our feast but the scoop of ice cream on top wouldn’t have been negotiable. :) I hope you had a great time!
