



I adore the spicy flavors of Mexican cuisine. I can’t resist a quick salsa of colorful peppers, sweet tomatoes, and tender black beans with a squeeze of lime. It’s the perfect dip for baked chips.
If I’m really in need of a treat, I’ll add chunks of pepper jack cheese and creamy avocado.
Heaven!
So here it is, Friday, and I deserve a night free from the kitchen. Lucky for me I have chicken leftover from last Sunday’s Mexican Roasted Chicken that needs a good home, so I’m going to add it to my go-to salsa.
If you don’t find my salsa and dip recipe appealing, it may be that you want something more substantial on a Friday night, so I present to you my family’s favorite Mexican recipes.
No one turns down this beefy Mexican Pizza . . .
or sometimes we make breakfast for dinner and serve these easy Mexican Baked Eggs.
Whatever you decide to do, I hope you relax and enjoy your Friday. After all, there’s plenty of chores waiting for the weekend.
