I’m in the Mood for Mexican Food

I adore the spicy flavors of Mexican cuisine. I can’t resist a quick salsa of colorful peppers, sweet tomatoes, and tender black beans with a squeeze of lime. It’s the perfect dip for baked chips.

If I’m really in need of a treat, I’ll add chunks of pepper jack cheese and creamy avocado.

So here it is, Friday, and I deserve a night free from the kitchen. Lucky for me I have chicken leftover from last Sunday’s Mexican Roasted Chicken that needs a good home, so I’m going to add it to my go-to salsa.

I loveeee flavors of the Mexican cuisine….Kristi, your Mexican baked eggs dish loos fantastic, yum:) I am fan salsa and guacamole with fresh tortilla chips….then quesadilla and tacos…. have to add Chicken tortilla soup, my new favorite.
