What’s one of the first lessons weight watchers learn?
If you don’t want to be hungry an hour after you eat, you’d better pack some fiber into your meal in the form of vegetables, fruits, beans, or whole grains, and this fiber packed cream of broccoli soup fits that criteria perfectly.
In order to lose weight, the goal was to keep your “points” within a certain range. To do that, you would calculate points based on a set of criteria, including an abundance of fiber.
That was good advice then, and it’s good advice now.
Weight Watchers isn’t the only company recommending a high fiber diet for weight loss. WebMD, one of my favorite resources for health information, confirms that fiber will keep you satiated longer with typically fewer calories.
That’s enough of my weight loss story. Let’s move on to today’s fiber-licious soup recipe.
Creamy soups can be loaded with fat and calories, but not this cream of broccoli soup. I used nonfat refried beans and spicy Mexican salsa to kick things up a notch.
Then I used my handy immersion blender to turn my concoction into a low calorie, high fiber, creamy soup.
We topped our soup with low fat cheese, sour cream and fresh cilantro. Then we baked a pile of corn tortilla chips for dipping.
You can’t do much better than 10+ grams of fiber in your soup, but you’ll need one more tip before you dig in.
Too much fiber when you aren’t used to it can have some interesting side effects. You might want to take it easy on the serving size.

- 6 cups broccoli florets
- ½ medium onion, chopped
- 1 tablespoon olive oil
- 2 cups low sodium vegetable broth
- 2 cups water
- 1 cup mild salsa
- 1 can Rosarita no fat Green Chile and Lime refried beans
- ½ teaspoon cumin
- ½ small lime juice
- 1 cup cilantro, minced
- 8 tablespoons low fat sour cream
- 1 tablespoon low fat cheddar cheese, shredded
- Heat a large saucepan with olive oil over medium high heat. Add onion and broccoli. Cook for 5 - 8 minutes until vegetables soften.
- Add remaining ingredients EXCEPT cilantro, sour cream and cheese.
- Reduce heat to medium and simmer until vegetables are very tender and liquid reduces by at least one third.
- Using and immersion blender, or a blender, puree soup. Add it back to the pan and heat through.
- Top with sour cream, cheese and cilantro.
