When Meyer lemons were on sale for pennies, a lemon sauce was on my must-make list.
Here in Seattle, Meyer lemons don’t appear often for a reasonable price, so I snatched them up in no time flat. If you aren’t familiar with this sweet, thin skinned lemon, The Kitchn has a primer for you, so you’ll know how to pick the best of the bunch.
Don’t be fooled into thinking your only use for this citrus sauce is as a topping for Greek yogurt and berries, or maybe a bowl of vanilla ice cream.
This lemon sauce isn’t extremely sweet, though it can be as sweet as you like if you add more honey or stevia (a natural low calorie sweetener).
Even better, you can easily morph it into a savory sauce for roasted chicken by adding a sprinkle of freshly minced rosemary and olive oil, or even a glaze for cod or tilapia by adding, a bit of Dijon mustard, freshly chopped dill and chives.
This lemon sauce keeps lemony fresh in the refrigerator for about two weeks, so you’ll have plenty of opportunities to use your creative cooking skills to whip up an amazing dish.

- 4 medium Meyer Lemons, zested and juiced
- 3 cups water
- 1 1/2 tablespoon honey
- 4 tablespoons cornstarch
- Combine ingredients in a medium saucepan with a whisk until cornstarch is completely dissolved.
- Bring mixture to a boil over medium high heat, stirring constantly.
- Allow to come to a rolling boil for 2 - 3 minutes.
- Remove from heat and allow to cool completely.
- Remove the layer of skin from the top, then refrigerate for later use.
