I love french fries, but I’ve yet to find the best way to bake them and have them come out crispy and golden, instead of soggy and limp. I finally found a technique in one of my cookbooks that really works. These fries come out baked to perfection!
4 large baking potatoes, peeled, halved and sliced in 1/4″ slices
Preheat oven to 450.
To prepare potatoes:
1. Peel (or not if you like the skin), cut in half and slice in 1/4″ pieces.
2. Rinse with cold water and drain on paper towel to absorb moisture. This is the key to really good baked fries.
3. Spray baking pan with cooking spray. Layer potatoes in pan in a single layer. Spray with cooking spray and toss with salt.
4. Bake for 30 minutes, or until tender and golden brown.
